🍴 What inspired you to become a chef?
“I started as a weekend KP in a local hotel while still at school; I loved the buzz of the kitchen straight away and knew that’s where I belonged.”

🥂 What makes events at Prince Philip House unique?
“The logistics! We can have multiple events running across different floors at the same time – preparation is key, but we thrive on the pressure.”

🌱 How does Michelin-star experience shape your menus?
“Seasonality, the best ingredients, and presentation that’s pleasing to the eye.”

đź’š On sustainability:
“Menus are designed to use as much of the ingredient as possible. Seasonal and locally sourced produce is a must.”

🍂 Favourite seasonal ingredient right now?
“Celeriac – such an underrated vegetable!”

🍰 Starter, main, or dessert?
“Dessert every time. I’ve got a sweet tooth.”
